Turkey Roll Wraps

So I am titling this recipe Turkey Roll Ups cause that is normally the meat that I use in these. However, I had some leftover rotisserie chicken and it worked perfect in these wraps!  These made for such a simple and light lunch. This recipe is very versatile too. You could use ham, turkey, or chicken, or if you are a vegetarian, then you could just use some of your favorite veggies. You can also switch up the cream cheese flavors and seasonings too. 

Really the skies are the limit with these little roll up wraps! 

Recipe:
2 Burrito sized Flour Tortillas
4 Tbsp. Cream Cheese (I just use original but you could use any flavor)
1-1/2 cup Shredded Chicken (or you can just use turkey or ham lunch meat)
1 cup Cherry Tomatoes (sliced in half lengthwise)
Couple pieces of Iceberg Lettuce
Seasonings such as Salt, Pepper, & Garlic Salt

Take the tortillas and spread 2 Tbsp. of the cream cheese evenly over the tortilla.  I lightly sprinkled some seasonings over the top to give it a kick of flavor. Next, layer the meat then tomatoes, then lettuce. 

Next, you are going to carefully roll up the tortilla as tight as you can.  Carefully cut each wrap into 5 different pieces.  If needed, place a toothpick right down the center to hold it in place. (just make sure to remove ALL toothpicks before eating)

Chicken Cordon Bleu

I love Chicken Cordon Bleu. I always have and I always will.  I think it may have something to do with the fact that cheese oozes out of the center of a nice and tender piece of chicken and then its rolled in crunchy bread crumbs and topped off with a delicious Hollandaise Sauce. I don't know that usually ALWAYS sounds good to me! How bout you? Not to mention that it is one of the easiest dishes to put together to!

Recipe:
2-4 boneless skinless chicken breasts (flattened to about 1/8"-1/4" thick)
2-4 Slices of thick sliced deli ham (or if you've recently made a ham like this one you could slices of that also)
2-4 slices of Swiss Cheese (or if you don't have swiss cheese on hand I really like smoked cheddar also)
1 1/2 cup Panko Bread Crumbs
Dash of Garlic Salt & Season Salt
3 Tbsp. Butter (melted)

Flatten the chicken breasts to about 1/8"thick.  Take 1 slice of ham and top with 1 slice of swiss cheese and roll up so that the cheese is rolled onto the inside of the ham.  Take the rolled up ham/cheese roll ups and roll 1 chicken breast around each one and pin the edges of the chicken together with toothpicks.  Take the bread crumbs and lightly season them with the garlic salt and season salt.  Take the chicken roll ups and roll in the melted butter then dredge them in the bread crumbs till all sides of the chicken are completely covered in crumbs.  Bake @*375 for 1 hour

Top with hollandaise sauce OR take 1 can of cream of chicken soup and 1/2 cup of sour cream mix it together and spoon over the top.

Ham & Poppyseed Sandwiches

Ham-A-Rama Recipe #3

Anyone sick of ham yet?!?! Cause I'll be honest I am getting quite tired of it! However, these little sammies are seriously so good, that even though we have eaten ham for the last 4 days straight, the hubs asked if I would make them for lunch again tomorrow!  And to be honest, I just might! These little sandwiches are great for a get together like the super bowl, a bridal/baby shower, or just for a really yummy lunch or dinner! 

Recipe:
1 package (12 count) Kings Hawaiian Sweet Rolls
12 generous slices of leftover Honey Baked Ham (or 1/2 lb. sliced deli ham if you haven't recently made a ham)
6 slices of Baby Swiss Cheese
6 slices of Smoked Cheddar
1 stick (1/2 cup) Butter (melted)
2 Tbsp. dried minced onion (I use lipton onion dry soup mix)
1 Tbsp. yellow mustard
2 Tbsp. poppy seeds

Mix together the melted butter, onion, mustard, and poppy seeds and set aside.  Slice all of your rolls in half and layer with a slice of ham and one slice of cheese ( I like to make 6 sandwiches with swiss cheese and 6 sandwiches with smoked cheddar. You can do all swiss or all cheddar, its up to you. )

Place the sandwiches into a 9x13 baking dish.  Drizzle the butter/onion mixture over the top of the rolls.  Place in the oven at *325 and bake for 20 minutes or until the cheese has melted.

*Note: Since there are only 2 of us, I cut the sauce recipe in half and made only 5 sandwiches and it was perfect for the 2 of us for lunch.

Ham and Cheese Soup

Ham-A-Rama Recipe #2!

This recipe is one that we usually only have once a year, and thats at Halloween when my mother-in-law makes all of her amazingly yummy soups!  I remember the first time I had this soup, I couldn't stop thinking about how yummy it was and when we would get to eat it again.  That's when I decided I HAD to have this recipe so I could make this soup in times as special as Ham-A-Rama week! He he :)!  So my sweet mother-in-law was kind enough to share her recipe with me so I am going to be extra kind and share it with all of you!  

Recipe:
2 cups Potato (peeled and grated)
1 cup Carrot (peeled and grated small)
1/2 of an Onion (minced)
1/2 cup Celery (diced in to small pieces)
3 (14 oz) cans Chicken Broth
1/2 cup Water
2-3 cups of Ham (chopped into small pieces)
1/4 cup Butter (melted)
1/2 cup flour
1 quart Half & Half
1 pound of Velveeta Cheese (cut into small cubes)
Salt and Pepper to taste

In a large pot, bring the broth, water, potato, carrot, celery, onion, and ham to a boil. Reduce the heat to low and let simmer for 30 minutes.  

After 30 minutes, whisk together the melted butter and flour and add it into the soup mixture. Next, stir in the half & half, salt and pepper, and the cubed velveeta cheese and stir over low heat till the cheese is melted and well incorporated. Serve in either a bread bowl or with rolls for dipping.

*Note: if you haven't already noticed from the list of ingredients, this recipe is super rich and now I know why we only have it once a year at Halloween.  I hope you enjoy!

Ham & Cheese Sandwich-Quiche Style

Leftover Ham-A-Rama Recipe #1!
So as you all know I made a HUGE ham on Sunday and am trying to use up every last bit of it.  I love me some good old ham and cheese sandwiches but I wanted to be a bit more creative so I turned my typical ham and cheese sandwich into a ham and cheese quiche that the whole family can enjoy. This recipe is perfect for Breakfast or Dinner. I made mine for dinner last night and also had me a slice for breakfast today! How nice is that! 2 meals out of one dish. Gotta love that! 


Recipe:
1 unbaked Pie Crust (I homemade mine click here for recipe)
1 1/2 cup Ham (chopped into small bite size pieces)
1/4 cup Onion (minced)
2 cups Cheddar Cheese (shredded)
5 Eggs 
2 cups of Heavy Cream (or whole milk)
1/2 tsp. Salt
1/4 tsp. Sugar

Preheat the oven to *425.  Sprinkle the ham, onion, and shredded cheese into the bottom of the pie crust.  In a large bowl,  mix together the eggs, cream, salt, and sugar.  Pour the egg mixture over the ham in the pie crust.  Place the quiche in the oven and bake for 15 minutes.

Next, turn the temperature on the oven to *300. Place a pie shield over the edges of the crust to avoid burning, and return the quiche back into the oven and bake for another 30-35 minutes.  The quiche is done when a knife, stuck into the center comes out clean.

Honey Baked Ham

So for Easter Sunday I bet you can't guess what we had for dinner...

Yep, ham.  I'm sure many of you probably had this same dish.  This was the first time that I have ever cooked a ham before and I have to say, it was WAY easier than I thought it would be!  I am so excited to use the leftovers in so many different dishes.  Yay! for no chicken this week (although I bet after having ham for a week straight I will probably either become a Vegan or be begging for some chicken again...) I will definitely be sharing some yummy recipes that include, yes, HAM in them, that I think you will all find super easy and super yummy! So stay tuned all week for what I like to call
HAM-A-RAMA LEFTOVER WEEK!

Recipe:
1 (any size) Bone-In Spiral Cut Ham (Pre-cooked) (I had a 10 pounder that's why it's Ham-a-rama week!)
Honey
Brown Sugar
1 can of Pineapple Rings
Whole Cloves

This recipe is so easy! There are no exact measurements either. 

1. Create a foil tent for the ham. To do this you are going to need 3-4 large pieces of foil. Take 2 pieces of the foil and place them horizontally underneath the ham, then the other 2 pieces vertically underneath the ham, and now place the foil and the ham into a large baking dish (like a 9x13 pan).  

2.  Score the top of the ham a couple of times. (this is just cutting a couple of x's in the top of the ham to allow the seasonings to absorb in)

3. Stick a bunch of whole cloves into the ham all over.  Now just drizzle the ham with lots of honey, then pack it with lots of brown sugar.  Drizzle a little bit more honey over the top.  Now take your pineapple rings (I used about 8) and apply them to your ham. (If they slip you can just support them with toothpicks, just make sure to remove them, along with the cloves, after the ham is done being cooked)

4. In the bottom of the baking dish, pour 1/2 cup of water.  Take the foil that is hanging over the sides and now seal the pieces all together at the top (tight just like a tent).  Bake in the oven @*275 for 3 hours.  Serve with potatoes and a green salad.
